Andrea's recipe for homemade bone broth

Ingredients:

  • 1 kilo of chicken bones (preferably organic)

  • 1 bunch of parsley

  • Juice of 1 lemon

  • 1 large carrot, in pieces

  • 1 garlic clove

  • 1 onion

  • 3 star anise

  • 15 juniper berries

  • 5 bay leaves

  • 3 tablespoons coriander powder

  • A. Vogel black pepper and herb salt (to taste)

  • One tablespoon dried celery leaf

Preparation:

  1. Put the bones in a large pan with plenty of water.

  2. Add vegetables and herbs.

  3. Simmer for at least 6 hours (longer = more powerful). Top up water occasionally.

  4. Strain and store in glass bottles or a pan in the refrigerator.

Broth stays good for days and can also be frozen in portions. Drink a mug hot daily, or use as a base for soups and stews.
